Warmer weather is here and that means we want to spend less time in the kitchen and more time outdoors with our family! Our trifecta chickpea salad is so easy to whip up in the kitchen and it’s filled with simple, healthy ingredients. This chickpea salad can be used as a side dish alone, on a sandwich/wrap or as a salad topper. The possibilities are endless! Prepare it on the weekend and have it ready to go when you are hitting the pool or the playground.
1 can chickpeas, drained
1 – 2 pickles, finely chopped
1 – 3 TBSP onion, finely chopped (yellow or red depending on taste)
1 stalk celery, finely chopped
1/4 cup Vegenaise OR 1/4 cup Notcho Nocheez™
Salt & Pepper to taste
Optional: 1 TBSP nutritional yeast
- Drain the chickpeas and put them in a bowl and mash them up with a fork, potato masher or pastry blender.
- Add the remaining ingredients and mix.
- Serve on a salad, a sandwich, or as a side dish!
